take a moment to be thankful......

A very good friend's son was in a horrible four wheeling accident yesterday.  He just got married last week and is in the hospital with head injuries today.  It just made me stop and think about how easy it is to forget to be thankful.  I don't believe we do it because we are selfish and ungrateful. Life gets so busy with jobs, errands, kid's homework and everything else, that we don't have a moment to stop and just think......


I don't know about you, but our children tend to complain about what all of their friends have.  As adults, it is easy to wish we had what the Jones family next door has; to question why we haven't been as blessed as someone else.  It is very easy to think about all that we don't have, but how often do we think about what we have?  Why does it take someone else's tragedy to remind us?  I hope you can take a moment today to reflect on the things that you are thankful for.

Cool Carolina Mornings....

The weather has turned cold here in North Carolina over the past few days.  I am so glad that it is finally starting to feel like Autumn or "Fall" as we say here in the southern part of the country.  Yesterday morning, my youngest daughter, McKenzie woke me to have me come see the six deer in our back yard.  They just stood there for the longest time staring back at us, through the glass, observing us as curiously as we were them.  This is my favorite time of  year.  I love the way the trees look when they are completely bare of all their leaves. I think the trees are the prettiest when they are stripped to their basic and most simple form; the trunks and branches totally exposed for all to see what has been covered up and hidden all summer. My mother hates the way they look and says they are ugly and naked.

My mom and I are so different, sometimes I actually wonder if I was switched at birth.  She loves the Spring and Summer and everything that comes with that time of year.  She enjoys yard work and planting flowers, gardening and getting her hands dirty.  She doesn't mind getting hot and sweating.  Myself, on the other hand, am a cold weather kind of girl.  I love it when it is too cold to do anything outside; when you have to stay in by the fire on the weekends, watching a movie, reading a good book and snuggling up with a blanket on the sofa for a cozy afternoon nap.  I think Winter time is God giving us a well deserved break from mowing, weeding and all that other stuff that makes us sweat.  Did I mention to you that I absolutely hate to sweat.  I know it is good for you and all that, but I still hate it.  

We lived in Florida for a few years, when my husband was in the Navy and I did not like it at all.  No offense to Floridians, because it is a beautiful state filled with some of the nicest people that I have ever met, but I missed North Carolina so much.  I missed the distinct change in seasons that they just don't have in Florida.  They have hot, hotter, hottest and most hot and for a girl that hates to sweat that is not a good place to be. We had a fireplace in our house and for the life of me, I could never figure out why.  I think one time, during the winter, we actually turned the air on very cold and built a fire to enjoy. Remember that I already told you how I get bored very easily; well that makes this the perfect place for me to be. Just about the time, I am starting to feel like I am in a  rut, the season changes and we are off to something new and different for a few months. I get to go from shorts and flip flops to sweaters and boots and it keeps me happy.  

North Carolina is a beautiful state and if you have never visited, you should give us a try sometime.  We have so much to offer with the mountains and the beaches all in one place.

Ham and Cheese Party Rolls

We are all so busy this time of year with shopping, wrapping and decorating; on top of our normal daily duties.  I thought I would share one of my favorite recipes with you that are so easy to make and yet so wonderfully good.  I am begged to bring these to all of our family parties. 

Rolls

2 pkgs. small rolls (Pepperidge Farm works great)
8 oz. sliced ham
6 oz. Swiss cheese slices
1/3 cup mayonnaise
1/3 cup miracle whip

Poppy seed sauce 

1 1/2 Tbsp. poppy seeds
1/2 tsp. Worcestershire sauce
1 1/2 Tbsp. yellow mustard
1 Tbsp. Dried Onion Flakes
1 stick melted margarine

Mix butter, poppy seeds, Worcestershire sauce, mustard and onion flakes together in a saucepan.  Slice rolls through center horizontally.  Mix mayo and miracle whip together and spread on inside of top and bottom of rolls.  Layer ham and cheese.  Replace top of rolls.  Cut to desired size.  Place on cookie sheet and spoon margarine mixture over the tops of rolls.  cover with foil and bake at 350 degrees for 15-20 minutes. 
These are really good made the day before and kept in the fridge until ready to bake.  The bread soaks up the liquid and gives it even more flavor.

Hi everyone,

My name is Kimberly Hedrick.  I am a complete beginner at blogging, but I love to talk and share, so I am sure I will find my way.  I racked my brain for days on what to name this blog and what it should be about. Then it hit me that I was trying too hard and it needed to be a reflection of me.  I am a Gemini and my mood does change rapidly.  I become bored easily and thus my interests change often; however the one thing that remains constant,  is my love of all things beautiful in life. The name,  "Kimberly's Klutter" seemed like a logical choice, since my mind is always cluttered with ideas and things that I want to do.  I love art, photography, decorating, traveling, good books, recipes and music. Therefore that is what this blog will be ............and more.  My hope is that every person visiting will find something of interest. If  you gain only a smile from the music or encouragement from an inspirational quote, then I did something right.  Thanks for visiting and please enjoy~
